So, not sure where your recipe for pumpkin puree (using canned pumpkin) and other substitutions comes into the picture as to trying to replicate the BLUE OCTOBER unless of course, your aim is to 'honor' it by deviating from it significantly.

They used butternut squash roasted in a hot oven, pureed with some olive oil, seasoned with some salt and pepper and a dash of ground nutmeg.

The baby spinach became nice and soft in the oven. Crunch or crisp to the toppings (re your substitution with kale and addition of pumpkin seeds) would not come close to an attempt to replicate the Blue October. Crunch and crisp for the pizza was from their very thin crust dough baked in a very hot oven.

You got the caramelized onions, mozzarella and blue cheese right.
Jhttps://www.blogger.com/profile/10619326198303622841noreply@blogger.comtag:blogger.com,1999:blog-6398130024759875264.post-24811734442178629612021-08-23T11:32:13.696-07:002021-08-23T11:32:13.696-07:00Glad it turned out well! I love that you're adapting the recipes to suit your family's preferences. I always try to make my recipes as flexible as possible. The cook time for this in the IP is 5 minutes, then let sit for 10 minutes before releasing the pressure. I especially love your instant pot recipes but appreciate you providing information about other cooking methods with stove top and slow cooker options. My husband is a confirmed meat eater so I do convert your recipes to suit our household appetites. Would it be possible to use boneless chicken breasts in this recipe and how would your suggest making this change? Also, I didn’t see the cook time included here in the recipe? Bottom line, too expensive and similarly I felt annoyed by the prescribed methods and poor quality of fresh ingredients. I agree with your conclusion, if I were cooking for just me in a small space with limited access to ingredients, I can see this being really helpful.Anonymoushttps://www.blogger.com/profile/15680021941739939467noreply@blogger.com
