Instant Pot spanakorizo (Greek spinach rice)

inspired by my favorite YouTube creator, and adapted for the instant pot, this one pot meal tastes like a combination of spanakopita and stuffed grape leaves.

As she unveiled an episode devoted to one-pot meals, my excitement brimmed over. That's my favorite category of food (due to laziness). She featured a recipe called spanakorizo – Greek spinach rice – and I had to make it for myself.

Any reader of this blog knows, I love to cook rice in the Instant Pot--it's the fastest and most foolproof method I've found. So I adapted this one-pot wonder for the Instant Pot.

This recipe is super simple, and made with basic pantry and freezer ingredients. Leftovers are great too, and it freezes well.

Spanakorizo
2 T olive oil
1 large onion, diced
3 cloves garlic, minced
1 lb frozen spinach, thawed
15 oz can diced tomatoes
2 t dried dill
1 cup medium or long grain white rice
1 1/2 cup broth
1 t salt
black and red pepper to taste

Finishing ingredients
1-2 T lemon
crumbled feta

Sauté onion in olive oil until golden brown. Add garlic and sauté for another minute. Add remaining ingredients except lemon and feta, stir, and set Instant Pot to high pressure for 4 minutes. Let release pressure naturally for 10 minutes, then release any remaining pressure. Stir in lemon juice and garnish with crumbled feta. Makes 4-5 main course servings.
